Dr. Simsek is a professor, head of the Department of Food Science, and Dean’s Chair in Food Science. She oversees the Grain Chemistry and Application Lab. Dr. Simsek has developed a research program focused on integrating crop quality with the structure-function relationships of proteins and carbohydrates to increase the utilization of cereals, legumes, and other underutilized crops and their byproducts in the food and baking industries. She works on global projects related to crop quality and functionality to help farmers and businesses market their crops. Dr. Simsek’s work with local growers and businesses aims to develop local foods and support local economies. Her work provides post-harvest and food quality information that is critical to producers and processors. Dr. Simsek has also conducted many seminars, web courses, and other training for various audiences on post-harvest quality, processing, and food chemistry.
